Chicken, Green Beans, and Squash. Oh My!



I recently have been trying to incorporate more vegetables into our diet. We love squash and green beans so I thought why not combine them with some yummy chicken and other things. It's simple, quick, and my husband and toddler approve.


Recipe

Feeds 4 -6

Ingredients:

- 4 Chicken Breasts (cut into cubes)

- 2 yellow Squash (sliced)

- half a lb of green beans (I used frozen chopped green beans)

-about 2 tablespoons of chicken stock / Bone Broth could be used as well

- 1/4 cup of heavy whipping cream

- 1 tablespoon of salt (I measure to my hearts desire)

-2 tablespoons of Spike seasoning (or any all purpose seasoning) Again measure to your hearts desire

-1/4 cup of breadcrumbs (I use gluten free breadcrumbs)

- 1/4 cup of white cheddar cheese


Instructions:

- Preheat oven to 400 degrees

- Cut chicken breasts into cubes, cut squash into slices, and put in a large bowl along with green beans

- Sprinkle salt, spike seasoning, chicken stock, and whipping cream and mix together

-Put mixture in baking dish and cover with breadcrumbs and cheese

-Bake for 35 - 40 minutes or until golden brown and cheese is slightly crispy

-Enjoy!
